

I’ve clearly got mango on the brain. I just did a collab where I made a mango chamoy granita (which was awesome.) And I’ve had this mango macadamia nut (and white chocolate — but that would make the title too long) sitting in my “to-develop” notes app list for too long! I wanted to wait til we broke heat records here in NYC before I asked you to turn your ovens on for this very tropical, very summery cookie.


Originally I wanted to go even crazier with this recipe and include lime zest in the dough (I know — Jesus Christ, man! Chill out you are way crazy!) But I came down to earth and realized that would be one too many flavors going on in one bite. I would even say that you could leave the white chocolate out altogether and really savor the balance of the slightly sour mango and the crunchy richness of the macadamia nuts. I just think the chocolate makes the cookies way less ugly, so.
A note about dried mango: I wanted to test this with regular unsweetened dried mango but, shucks, I ate it all before I could. So I used the sweetened, soft dried mango from Trader Joe’s to develop this recipe. If you can only get or only want unsweetened mango, you can try that and it will probably be okay — but I can’t vouch for it.
