You know what I did yesterday for the first time ever? Made a flax egg. That’s probably not entirely true, but I can’t remember the last time I did it. Of course, Trader Joe’s was out of eggs. Does anyone have intel on when they stock? I feel crazy asking this. I was testing cranberry orange muffins (by that I mean, I’ve had cranberries in my fridge sine the holidays and want them out) and since I still haven’t been to another store to replenish my supply: flax eggs.
So I ground up some flax seeds in my spice grinder, mixed 1 tablespoon of the grounds with 2.5 tablespoons of water, and flax egg. The muffins…. were great. They didn’t rise quite as tall or form the same structure and integrity as a muffin batter that uses eggs. But still, vegans kind of cooked with this one. Everyone else will probably have to catch up with them one day.
That being said, I posted a version of this roundup on Instagram and people seemed to think it was helpful! Even if you saw it there already, it might be helpful to have the links and descriptions in one place. So here are a bunch of my recipes that have absolutely nothing to do with chickens. (But just so you know, a lot of my cookie recipes use only one egg.)
One Giant Pop-Tart


Okay, this one is cheating a bit but you don’t have to use egg to seal the borders! You could use milk or cream and crimp with a fork. I used a homemade fig blueberry jam filling for this but any store-bought jams or preserves you love will work great.
Walnut Pistachio Baklava


The recipe I grew up making with my mom — with the very small change of adding pistachios! Core sense memory unlocked! It’s way easier and less intimidating than it looks, I promise, and has such a big visual and textural payoff. Just make sure you let the phyllo dough thaw ahead of time!
Mango Coconut Terrazzo Pie



I was very inspired by those specialty milk teas with fruit jellies and boba in them — but also the composite material terrazzo that, when sliced into sheets, reveals a mosaic of colorful specks and fragments of different stones such as marble, granite, quartz. It’s no-bake, but you don’t have to wait until the summer months to enjoy it!
No-Churn S’mores Ice-Cream


Chocolate-covered mini marshmallows. A buttery, graham cracker gravel. Vanilla ice cream that only requires a hand mixer (or even just a whisk!) to make. At what point were you convinced?
Butterscotch Chocolate Corn Flake Treats
An extremely popular recipe in the EGO community — and one that is mostly low-effort despite feeling super fun and special. Cornflakes, trapped in a web of brown-butter-scented marshmallow and melty butterscotch chips, topped with chocolate and a heavy-handed sprinkle of sea salt flakes.
Cheddar Shortbreads


I neglected to include these in the IG carousel! These are packed with cheddar but still snap like the Sharks and the Jets. You can customize them how you like: plain, with nuts, or even with dried cranberries. I like to serve them with a little fig jam or, even better, cream cheese topped with pepper jelly.
Bird’s Nest Cookies


As one commenter pointed out, these do have eggs. I’m sorry, and I’ll do better next time. I know there are lots of names for these and I still haven’t heard all of them. What do you call them?
Caramel Rice Pudding


Who says we can’t have creamy, custard-y desserts without eggs?
Raspberry Oat Bars


A classic EGO recipe that is so simple to make and comes together in less than an hour and a half. Folks, the crumble topping is the same as the base — and you can blitz the oats then make the dough in the same food processor.
Strawberry Rhubarb Crumble


Spring produce is calling. Aren’t you jealous of all those Brits and their forced rhubarb enjoying the stalky pink stuff this early in the year??? This whole thing is made vegan by the inclusion of vegan butter!
Spinach-Artichoke Dip Galette
Super cheesy and creamy spinach artichoke dip encased in a flakey pastry shell. Again, you can brush the pastry with cream or butter to “wash” it and get the sesame seeds to stick.
Love the galette! Reminds me of the grilled baby artichoke sandwich with calabrian chiles and sharp provolone I adapted from hit NYC eatery Misipasta for easy home cooking!
